Speaking of cpap issues: it's always OK to ask to turn over if I'm snoring despite the mask, or a mask de-alignment leads to undue noise. I don't have chronic problems falling or staying asleep, so waking up for the 30 seconds to adjust is preferable to driving my partner to the couch.

Roasting onions has kind of the same effect as roasting garlic. And why not? They're both in the Allium genus, along with leek, shallot, chive et al. Softens the texture, mellows acrid sulfur compounds that characterize alliums, caramelization enhances subtle sweetness and complexity.
This AllRecipes recipe calls for balsamic vinegar, but it's just an optional drizzle.
