Recipe Tin Eats: Mexican Ground Beef Casserole wih rice
(cazuela Mexicana de carne molida con arroz}
Subbed 2/3 cup Rao's marina sauce for tomato paste; kidney beans for black beans; frz corn for canned.
We had a backlog of cooked white (jasmine) rice so I used only 1/2 ~ 3/4 cup chx stock
and added the cooked rice at the end (befores tirring in 1/2 the cheese).
Did not use: paprika, coriander, capsicum / bell pepper, green onion / shallot.
Would have been fine with 2 lbs ground beef (i.e. double the meat for more protein)
