LP trky-bcn-chz with my morning coffee and vitamins. By midmorning I was having an unusal hankering for something sweet, so I went with a Dunkin's blueberry muffin. I wasn't expecting a nutritional powerhouse... but... 460 kcal? Why does a muffin have to have that many calories?
Not the first time I've said "gee, I should hack a healthy blueberry muffin recipe"... except lacking a conventional oven really puts a brake on that project. Whole-grain flour, egg, milk or smilk, maybe a pinch of baking powder?, some blueberry puree - it can't be that difficult.
